Choureal, located in one of the central streets of Thessaloniki, is the first pastry store which specializes in handmade profiterole. The set of stages of profiterole production, which in Choureal happens in the customer’s presence, determined the arrangement of the equipment in the store.

More precisely, the master fridge is situated in the center of the room, whereas the kitchen with the baking chambers is settled in the rear of the building. The customer to be served has to follow a circular route in the aisle which sur- rounds the master fridge. During this walk the customer has the opportunity to see the plating of the profiterole.

 

The reception area is narrow but with high ceiling. Additionally, it is moderately furnished so as to allow the customer adequate space to move towards the main serving counter. Ideally, the customer’s attention will be drawn to the ceiling therefore a 3D construction installed top-down, takes full advantage of the height of the room. The selection of the characteristic colors, as well as the graphic representations on the walls is based on our purpose to establish the business identity in a fashion that will assist our owners to realize their ambition to franchise their business. More- over, the atmosphere in the store is intended to be associated with that of a jewelry store. Consequently, the lighting used is not the common lighting met in the majority of pastry shops. Instead, we have custom-made light spots installed whose beams are sent to the particular directions we care to illuminate.
